Simple and Delicious Breakfast Muffins

On a weekday, I am typically frazzled and rushed in the morning, trying to get out of the house on time without forgetting anything important. Breakfast needs to be convenient, and easy to eat, to fit into my morning routine. As much as I wish I was one of those composed women you see on TV that brew coffee, fry some eggs, and read the morning paper – all while looking flawless in a little robe and with perfect hair – before donning their skirt suit and heading out the door to whatever important job they clearly have- I simply am not.

So my breakfast typically consists of a small iced latte with skim milk from Dunkin (yum), and the veggie egg-white wake up wrap. Breakfast totals 6 Weight Watchers points (4 for the wrap, 2 for the small skim latte), and costs just under $5.

But, thanks to Pinterest, I’ve discovered an alternative to that five-dollar breakfast, that I can make in advance for the week & enjoy just as quickly!

It almost seemed to good to be true when I first saw the pin for this recipe on Pinterest. Not only are these breakfast muffins made from just TWO ingredients, but after further research I discovered their Weight Watchers Points Plus value to be a mere 2 points per muffin! Double score, I say!

For these easy muffins, all you will need is:

1 box cake mix (I used spice cake mix and loved it. Other versions of this recipe recommend yellow or chocolate cake mix, too).

1 15 oz can of pumpkin

Optional: 1/4 cup of water (to make the mix a bit lighter)

Ignore the instructions on the back of the cake mix box, and simply combine the mix with the pumpkin, add a splash of water if you like (I used 1/4 cup), and blend until smooth.

Grease your cupcake/muffin pans (or use cupcake liners if you like), and spoon the batter into the cups. Bake at 350 degrees for 20-25 minutes.

The muffins are done when a toothpick inserted into the center comes out clean!

The muffins popped right out of the trays, and I left them out to cool, then packed them in an airtight container to eat throughout the week.

You simply must try these. They are SO good.

Two muffins = four WW Points Plus. They are moist, sweet, and taste as good as any store-bought pumpkin muffin I’ve ever had.
